We featured this delectable little treat at our Holiday Open House! If you missed the chance to try it, you can make it at home! How often do you get treats that are healthy AND tasty? These make a great high protein snack or you can dress them up by dipping them in chocolate for a great holiday treat.
~Gluten free, nut free, vegan, sugar free!~
1 cup oats
½ cup sunflower seeds
1 cup dates
½ cup nut butter or tahini (use tahini for a nut-free version)
1-4 tbsp water as needed
Remove pits from dates and soak in hot water for 5-10 minutes to soften. Drain water.
Blend oats, sunflower seeds, dates, and nut butter in a food processor. Add water if needed to make the mixture moist enough to form into balls (don’t add too much or it will be sticky!)
Shape into balls about 1″ diameter (for uniform size, measure out with a tablespoon before rolling).
Dip in chocolate to up the yum factor or leave as-is for a healthy, high protein snack. Store in the fridge or freezer until needed!
